Whenever anything is done by hand, there is a possibility that the person doing it will miss or skip a step in the process.   This becomes especially critical when that person is doing something that can impact our health.  We have become more aware of this recently and are limiting our buying to stores and restaurants that have automated food sanitation technology.  This reduces the chances that harmful germs or chemicals will sneakl through the process and end up being served to us on our plates.  We can not be too careful when it comes to what we are putting in our mouths.
